Very veggie Omelette

Good morning!!   Woke up to the sun shining and feeling so good about the choice to go Vegetarian.   My taste buds are alive and loving it too.   Thought I would share my breakfast this morning.   It sure was Yummmy!!  (and super filling).



Ingredients:
1/2 cup liquid eggs
1/4 cup Feta Cheese crumbles
2 grape or cherry tomatoes cut in half
1 mushroom sliced thinly
2 asparagus spears cut into 1/4 in pieces
1 tablespoon each of finely chopped Green pepper, Red pepper and Red onion.
salt and pepper to taste

Spray a nonstick skillet w/ cooking spray
Over medium heat saute mushroom, peppers & onion w/ salt and pepper till they start to soften some, (about 2 minutes).   Add in tomatoes and asparagus (I used frozen that I had thawed slightly so I could chop it).   Saute about 2 more mins.   Add liquid eggs, cook on low till almost set, sprinkle with Feta cheese and continue cooking till eggs are set.  Fold omelette in half and let sit in warm pan just till cheese softens..(you guessed it...2 more minutes).
Slide onto a plate and ENJOY!!

Total calories for meal shown  (omelette, 1 cup fresh pineapple and 1 english muffin) = 378 calories!
